What a whirlwind of weather we had this past weekend in Nashville - cold and rainy turned into sunny and clear skies. Classic Nashville… but all I know is my allergies are in FULL swing… yay.

I want to share with you a classic, simple weeknight recipe! I love making this for dinner and taking leftovers for lunch. It’s quick to make, packed with nutrients and contains all 4 of my power picks (duh!)

Asian Salmon with Sesame Brussels

Weeknight favorite!

Makes: 4 servings

Ingredients: Salmon
  • 2-3 large pieces salmon
  • 1/4 cup teriyaki sauce of choice
  • 1 tsp sesame seeds
  • 1 tsp garlic powder
  • Ingredients: Brussels
    • 2-3 cups Brussels sprouts, cut into fourths
    • 1 tsp sesame oil
    • 1 tsp sesame seeds
    • 1 tsp garlic powder

    1. Place salmon in a ziploc bag with marinade and refrigerate for 1 hour or overnight.
    2. Preheat oven to 400 F.
    3. Chop brussels and toss with sesame oil and spices.
    4. Place brussels on baking sheet and cook 10 mins or until crispy.
    5. On stovetop, place salmon with marinade face down on a skillet.
    6. Once salmon is cooked to liking, remove from stove and plate with brussels.
    7. Serve with sweet potatoes, brown rice or farro.
